This fresh mediterranean salad features our SPAROZA Mediterranean Spice blend in both the salad and the pesto sauce. Perfect for a light meal or entree.
4 pommodoro tomatoes, diced
1 green pepper, finely chopped
2 spring onions, finely chopped
2 tbs olive tapenade
½ tsp SPAROZA MEDITERRANEAN BLEND
1 cucumber, cut into semicircles
Mix all ingredients except for the cucumber in a large bowl
Green Pepper Pesto
1 green pepper, chopped
150 ml olive oil
1 tbsp vinegar
½ garlic clove
1 tsp SPAROZA MEDITERRANEAN BLEND
Add all ingredients to a blender and blend until smooth. Run sauce through a strainer for an extra silky texture.
Form a circle with the slices of the cucumber (see photo)
Pour a few tablespoons of pesto.
Place a round frame in the middle and use a spoon to fill it with the salad.
