Summer is all about eating the freshest seafood, with simple ingredients and flavours that shine. You'll love these simple, spicy mussels - best served with toasted bread and a chilled glass of beer or Semillion Sauvignon Blanc.
- 1kg Mussels (very well cleaned)
- 1 cup. White wine
- Pepper (freshly ground)
- 2 tbsp. Olive oil
- 1/2 cup. chopped parsley
- 1 chilli Pepper, finely sliced
- 1 lemon (zest)
- 1 tbsp. Garlic (pulp)
Over high heat, let the pan heat up. Add the mussels and immediately add the wine, pepper and the garlic. Cook for about 10 minutes, until all the mussel shells open up. Before turning the heat off, add the olive oil and sprinkle with parsley, chilli and lemon zest. Serve with toasted bread and extra parsley leaves.
