To make this recipe lent-friendly, simply remove the spicy sausages!

Ingredients :

3 Spicy Sausages, sliced

800 gr. Gigantes (Giant Beans), pre-cooked well or canned

800 gr. Canned tomatoes

2 tbsp. Olive oil

1 Onion, chopped

2 cloves Garlic

2 tbsp. Fresh Rosemary leaves

1 tsp. Smoked Paprika

1 litre Broth, Chicken or Vegetable

1 tbsp. Vinegar

2 tsp. Brown Sugar

Salt-pepper, freshly ground

Kefalograviera cheese (for serving)


In a deep frying pan, heat the oil. 

Add onion and garlic and sauté for 3-4 minutes, until tender and slightly transparent. 

Turn up the heat, add the sausages and cook for 4-5 minutes. 

Add rosemary, paprika, tomatoes, broth, vinegar, sugar, salt, pepper and bring to the boil. 

Add the beans and cook for 5 more minutes. 

Serve the soup with grated Kefalograviera cheese, chopped rosemary and toasted bread.
