The beauty of this recipe is its simplicity. Pop the beetroot in the oven, and come back to it an hour later to assemble in a few moments! Fresh and delicious, just how its made in the village.
You will need:
2 x beetroots, whole
200 gr Feta cheese
3 pinches dried oregano
Extra virgin olive oil
Preheat the oven at 190 C. Wash the beetroots thoroughly, and then wrap them one by one in aluminium foil and place in oven and cook for 1 hour. Let cool.
Peel and slice the beetroot into round slices. Place the slices on a large serving plate.
Dress with 2 spoons of extra virgin olive oil and a squeeze of lemon. Crumble the Feta, sprinkle the oregano, and dress with a touch more olive oil.
